Cheater’s Stroganoff

Hubby loooooves stroganoff.  I, however, do not like the intricacies of making it “properly”.  Nor do I like the expense.  So, I came up with my own version of a Cheater’s Stroganoff and it all hinges on a basic white sauce.  What?!?  You don’t know how to make a white sauce?  Don’t feel bad, neither did I for years and years.  I thought it was some horribly difficult thing that I could never master. Boy was I wrong!  First though, here’s my Cheater’s recipe:

1 pound stew meat diced and browned (or one pint canned roast)

1/2 onion

2 cloves garlic chopped

1/2 cup chopped mushrooms

2 cups medium white sauce

Worcestershire sauce

1/2 cup sour cream

salt and pepper

3 cups egg noodles cooked and drained

Brown the onion and garlic lightly then add the meat and brown.  Add mushrooms .Make white sauce in another pot. Add a couple good splashes of Worcestershire sauce to the white sauce or to taste.  Add salt and pepper.  Stir in sour cream.  Add white sauce to meat and stir well.  Add noodles and heat through.

So, just how do you make a white sauce?

In a medium pan melt 4 tbsp. of butter

Add 4 tbsp. of flour and whisk til smooth.

Allow flour mixture to cook for a minute to brown slightly.

Slowly whisk in 2 cups of milk. Turn heat down and allow sauce to simmer til thickened whisking frequently.  Add salt and pepper to taste.

Do all of that and you will end up with a bowl full of stroganoff like this:
