Peach Butter

Tonight after work I went insane.  I decided to go ahead and make and can the peach butter.  First I had to thaw out five quarts of sliced peaches and get them cooking.  They completely filled my blanching pot.

Once they were all separated I blended them into puree in batches.

After four hours of work I have 22 jars of peach butter cooling and sealing on the counter.

Phew!  It was a lot of work, but it’s done now and I feel great about it.

    Wow! I love adding to my shelves like that. I’ve never had peach butter..sounds so interesting.

      Lol….not really. Just 4 quarts of peaches, 5 cups of sugar, and three bags of liquid pectin. Kinda did it off the cuff.
