Ham Casserole

Tonight I really didn’t feel like messing with a lot of cooking so I chose to do a comfort food quick dinner…Ham Casserole.  I’m sure there are thousands of variations on this, but here is mine.


2 cups chopped ham

1 box of the Blue Box mac and cheese prepared according to package directions

1 onion and three cloves garlic chopped

4 tbsp margarine

4 tbsp flour

11/2 cup milk

1/2 cup chopped mushrooms

shredded cheese

Prepare mac and cheese.  Chop onion and garlic finely.  Add mac and cheese, onion and garlic, mushrooms,  and ham cubes to baking dish.  Melt margarine in pan, stir in flour with whisk til smooth.  Pour in milk slowly while whisking.  Continue to heat and whisk until smooth and thickened.  Pour over other ingredients in baking dish.  Stir well.  Top with shredded cheese.  Bake for 25-30 minutes at 350 or until cheese is melted and everything is heated through.

Serve with a side of peas (our favorite combination).

For dessert serve chocolate chip cookies.

That’s good enough for me.
